Retaining Date/Time Stamps

Is there a method of retaining the original file datestamps for converted files?

 

I want to archive some call recordings (huge WAV files) to MP3, but need to ensure the new files have the original creation datestamps so that I can locate them.

You're creating new files when you make the conversion, and the datestamps reflect this. Once you have completed the conversions you could use another third party application (such as Attribute Changer by Romain Petges) to modify this information. We can't give support on this though.
