Stereo encoding in Mp3 save

I am using wave pad to edit voice recordings and I am wondering about the Mp3 settings. I am archiving as Mp3s and I would like to know more about all of the mp3 settings, I understand bitrate, but I am not sure about changing the stereo encoder setting. Any insight would be helpful.
