When I change the currency in one invoice, say from £UK to $US, the currency makes the same change in all my other invoices. How do I stop this?

When I change the currency symbol in one invoice (say from £UK to $US), the currency symbol changes in all my other invoices.
How can I stop this? I'm using the free accounts program and am considering the paid version, but want to know if the paid version avoids this problem.
Surely I'm not the only one making out invoices in more than one currency?
