How do I record mono with Behringer mixer and Debut

Two related questions:

1. I have a 2 channel Behringer UMC202HD which I use with Debut Professional V4.00 for computer screen capture during our board meetings. I think upload the files to Google where they can be accessed. Two Microphones are used, and the recording comes out as stereo so the listener when playing back the recording hears some people in one ear and some in the other ear. How do I make it record in mono. I really don't want to do post-processing.

2. I would like to add 2 more microphones for a total of 4. Can I upgrade to a Behringer UMC404HD and get a mono recording. I'm afraid if I upgrade, I'll end up with 4 audio channels on the recording.
