how to apply amount due onto a new invoice

if a customer owes $60 and has paid $50, is there a way to add the remaining $10 onto a new invoice?

You could add it as a line item, but I know of no way for it to automatically add an outstanding balance to an invoice. Invoices generally don't do that because they are supposed to be tied to a specific job. You can issue a statement for the customer that shows outstanding balances.
